Michigan: Oatmeal Reimagined at Sterling Heights


The dietitians at Evangelical Homes of Sterling Heights concluded their OATS Superfood month with a tasting of warm, carrot cake oatmeal. The aroma of cinnamon and nutmeg filled the halls as residents, staff and visitors tasted the delicious treat. Try to recipe below for yourself!

3 cup
Carrots, Fresh, Grated
4-1/2 cup
Water
2 cup
Cereal, Oatmeal, Old Fashioned, Dry
6 tbsp
Raisins
1 tbsp
Spice, Cinnamon, Ground
1 tsp
Spice, Ginger, Ground
1/2 tsp
Spice, Nutmeg, Ground
2 tbsp
Syrup, Maple, 100% Pure
1 tsp
Flavoring, Extract, Vanilla Pure
6 tbsp
Nuts, Walnuts, Halves & Pieces, Chopped
Preparation
Method
1Refer to HACCP Plan Form HFS# 001: Prepared Hot for Hot Service.

Place grated carrots and water into a pot and simmer covered for 10 minutes. Add the remaining ingredients (except the walnuts) and cook another 5 minutes until oats are tender. Serve with toasted walnuts on the side.

Portion size: 1 cup oatmeal with 1 tbsp walnuts, yield: 6 portions
Serve Hot.
