Indiana: Hoosier Village Retirement Center RD Chat
Megan Gable and Tonya Maschino conducted an open chat session for the residents at Hoosier Village. We provided education handouts, activities and pamphlets. We successfully held many open discussions with the residents and answered several individual questions. John Thompson , the DDS, also attended and provided up coming events for our group. Refreshments and snacks provided for the residents. Great turnout!
California: Spring Lake Village Winw Pairings
This week Dining Services hosted a Lunch and Learn for the residents on food and wine pairing.
We tasted five wines (plus a sparkling aperitif) all paired with a dish specifically created to show the effect of food on wine. It was educational, fun and deeelicious!

Michigan: National Nutrition Month at Isabella Medical Care
For National Nutrition Month our team set out on a mission to give our residents a flavor experience outside the ordinary. Through a combination of familiar foods with a little twist, we were able to offer samples to all residents, staff, and visitors. Utilizing our very popular mobile sample cart, we featured a black bean meatball with marinara and fresh baked bread w/ herbed oil for dipping. Our guests were pleasantly surprised to try the meatless meatballs packed full of flavor and good nutrition. Although the residents are not quite ready to have this new entrée featured on the menu, they were thankful for the food experience.

Illinois: Presbyterian Homes' Food Fight Qualifer Round
To take advantage of our new open kitchen concept at Lake Forest Place we had our cook off between Chef Robert Macclure of Lake Forest and Chef Kyle Bulfer of Westminster Place. The winner will participate in the regional cook off.
The Chefs were given a mystery basket and one hour to complete their creation.

The judges had a difficult decision to make as both Chefs did a great job.

Illinois: Friendship Village Wellness Fair
Friendship
Village hosted a Wellness Fair featuring a display from Dining Services
highlighting Guess the Grains interactive display where residents and
community members learned about different whole grains, such as Freekeh,
Millet, Spelt berries, and Farro. Chef Rob Campbell created a Mango
Lemongrass Cilantro infused water, a huge hit at the fair for over 400
attendees and 50 vendors! Clinical Nutrition Manager, Megan Peters,
educated attendees about the health benefits of whole grains and how to
incorporate grains into a healthy diet regimen. Dining Services also
used this opportunity to communicate the introduction of these new
grains to be provided at different dining venues in the future.

Michigan: Chef Reserve Dinner at NorthPointe Woods
This
month we held our last Chef’s Reserve Dinner with Chef Nicole here at
NorthPointe Woods. To stay in line with National Nutrition Month, her
theme for this dinner was Fresh Vegetables. Chef Nicole wanted to show
our residents that it’s possible to have a hearty and
flavorful meal without the use of meat. The residents were very
impressed with the colors and flavors that Nicole presented with this
dinner.

Michigan: Alzheimer Plaque Presentation at Woodside
Chef
Trevor was approached to do appetizers for a plaque presentation by the
Alzheimer Association. This was the perfect opportunity to help raise
awareness about the diet which can help prevent the disease, and also
include National Nutrition Month. 8 things that the “Mind Diet” says are
important to include in your diet to help prevent the disease are.
Legumes, Olive Oil, Fish, Berries, Nuts, Whole Grains, Leafy Greens and
Wine.

Illinois: Shellfish at Lake Forest Place
I love to cook what I love to eat and there is nothing
better than the flavor and versatility that can be achieved with shellfish. At
Lake Forest Place you will see seafood peppered throughout our menus. Lobster,
crab and shrimp add an extra touch to the fine dining experience we provide. But
when it comes to cooking with oysters, mussels and scallops, I just can’t get
enough.
Eating oysters is always a culinary
adventure, with such a wide variety to choose from, they are a chef’s dream to
prepare. The east coast blue point
oyster offers a briny, yet fresh salt water flavor while the west coast
kumamoto provides a completely different experience with a refreshing cucumber
essence. Either raw on the half shell or roasted on the grill, you are always
in for a special treat when it comes to eating oysters. Recently I have
incorporated them into my menu using several different techniques; on the half
shell, a traditional oyster roast and smoked oysters for brunch.
The classic oyster on the half
shell accompanied with a house made cocktail sauce and house made mignonette
sauce allow the natural flavor of the oyster to shine through. We did a traditional
oyster roast at our Carolina Low Country dinner that proved to be a whole new
adventure for our residents. Grilling the oysters over an open fire and
covering them with a water soaked burlap sack elevated the flavor and texture
to a whole new level. The heat from the grill and the steam from the burlap led
to an unbelievable layering of flavors and mouth feel, mellowing the brininess
and causing the oyster to swell to the perfect firm texture.
Oysters and mussels are highlighted
every week on my Sunday Brunch menu. Smoking the oysters adds a new flavor
profile. The smoke combined with the brine like salt water packs a powerful
flavor punch. They are then served with an array of other smoked fish, bagels
and cream cheese.
One of my best sellers on the menu
is my version of the French classic Moules Marinieres, mussels in white wine.
In my preparation, I strive for a lightness that is achieved by eliminating
heavy cream. I blend garlic, shallots, butter, white wine and fresh herbs with
the mussels, I serve it with a crusty French baguette to soak up all the
delicious broth. I choose to use P.E.I (Prince Edward Island) mussels, as I find
that the perfect size, texture and sea flavor from the cold north Gulf of
St.Lawrence takes my dish over the top. Not
only do these mussels provide the flavor profile I am looking for, they are
also sustainable and all natural. P.E.I Mussels start out with mussel seeds
growing on collector ropes suspended in the ocean. The seed is collected from
the wild, not hatcheries.
I also use scallops in several
different ways on my menus. With such great versatility, I can smoke them for
my Sunday brunch or prepare them my favorite way with some sea salt, pepper and
clarified butter to bring out the natural sweet flavor. When purchasing my scallops, I take many
variables into consideration like wet vs dry, diver vs no diver and size. I prefer
the U-10 dry pack diver scallops (U-10 refers to the size; 10 or less per pound
or an average of 1.6oz per scallop). The dry scallops are shucked on the boat,
but go into a dry container with no water or preservatives. Again, like my
mussels, I prefer the natural route. This creates a more pure and concentrated
flavor. Their short shelf-life ensures freshness at purchase. Wet packed
scallops are shucked on the boat but go directly into a cold water-filled
container, which lengthens the preservation time (often a preservative or
chemical salt is used to prevent the scallops from spoiling). Unfortunately,
the scallops absorb water and become plump, which reduces the flavor and
creates a tougher texture. Scallops packed in this manner tend to be older by the
time they reach their destination. Finally, Diver refers to the method of
harvesting. Instead of being dredged, these scallops are harvested by the hands
of divers. Though incredibly labor intensive, it is far less damaging to the
environment than disrupting the ocean floor with nets. One of my personal
favorite scallop dishes is my pan seared diver scallop with Moroccan spiced
beluga lentils, English pea puree, saffron cream and micro basil.
Letting the natural flavors shine through is the most
important aspect to me when preparing seafood. Heavy sauces and intense
seasoning will only cover up the innately delicious flavor of seafood. It is
also important not to overcook seafood because it is lean, naturally, and will
therefor easily and quickly dry out.
With all the different seafood varieties available, the menu
possibilities are endless and I will continue to make seafood a staple on my
menus here at Lake Forest Place.

Michigan: NNM 2016 at McLaren Central
National Nutrition Month at McLaren Central: In celebration of National Nutrition Month and to promote increased intake of vegetables free samples of delicious Roasted Root Vegetable Risotto were offered to all guests and staff members.
To promote the importance of staying hydrated, refreshing samples of Cinnamon and Apple infused water were offered to our staff and guests.

Illinois: Pub Opening at Westminster Place
The Pub at Westminster Place is finally renovated and open! Along with a new bar we have a new drink and food menu: pizza margherita, truffle beet hummus crostini, sausage and kasseri stuffed mushroom caps, fish and chip slider.
On Monday, the culinary team had a grand reopening for the residents and staff, providing complimentary appetizers and a signature cocktail. The residents love the new decor and modern feel of the new pub. Special thank you to the Westminster culinary staff for working very hard to make this event possible.

Illinois: Choose to Lose at Lake Forest
Lake
Forest Place kicked off National Nutrition Month with an 8 week
employee weight loss challenge. About 1/4 of employees signed up to
participate. Throughout this fierce competition, the dietitians Megan
and Jessica are providing weekly education packets, checking weekly food
and exercise journals as well as tracking weekly weigh-ins. We started
the competition with a full body analysis using the In-Body machine.
Seeing the employees so enthusiastic about making healthy life changes
makes all the hard work worthwhile.

National Nutrition Month at San Francisco Towers
Happy National Nutrition Month 2016! Here are a few photos of our Farmer's Market for our IL residents today. We are also having them play a fun game to guess which legumes, grains, greens and herbs are posted with a chance to win prizes.
The theme of National Nutrition Month 2016 is “Savor the Flavor” with the following points:
1.
Plant Forward (increasing fruits and vegetables)
2.
Reduced Red Meat (reduced portions, making red meat an accent vs a main
component, alternate proteins)
3. Whole Grains (increasing use of whole
grains)
4. Herbs and Spices (using these to reduce
salt, sugar and (bad) fat in the diet)
Join me in using this as an excuse to hone in on dietary changes and try something new. I decorated a board outside the G1 employee lounge with a few suggestions. Patrick and I are brainstorming (did you see all the stormy weather we created? – joking) on employee wellness right now too, so stay tuned.
Also, I will be hosting a monthly round table with our IL residents and welcome one staff member each month to join me from 12:00 – 1:00. Keep me posted if you are interested in joining me in a coming month and I will add your name to the list.

Michigan: EVHM Power of the Purse
EVHM recently host The Power of the Purse part in partnership with United Way. Evangelical Homes' new Executive Chef, Todd Stapnowski and Brecon Villages Executive Chef, Janet Nichols created beautiful dishes to make this special event amazing.
A beautiful deep green Kale salad, tossed with raspberry vinaigrette with dried pineapple and cranberries along with a savory Cauliflower and spiced chicken risotto were the two of the high lighted dishes. Cuban pulled pork mini tacos topped with cilantro were also beautiful presented inside lemon wedges.
Not to forget dessert, our guests were given the options of raspberry crème and dark chocolate nestled in between layers of buttery pound cake or Tres Leche cake with Citrus whipped cream and dark chocolate and fruit disks.

Illinois: Top Chef at Villa St. Benedict
Villa St. Benedict hosted a Top Chef event which 130 of our residents and staff participated in. There were 4 chefs from Villa and 2 guest chefs that competed. Each person bought an entry ticket and were given a token for voting after they tasted each dish. The food stations included; Polenta Lamb, Limoncello Mousse, Sesame seared tuna, Kickin' shrimp over salad, Braised short rib over Yorkshire pudding, and the winning dish, by our very own Chef Mario Radilla, Lobster Empanada! The winning dish will be featured on our next a la carte menu as an appetizer!

Illinois: Brew Masters Dinner at Friendship Senior Options
This past month, culinary services teamed up with lifestyles and made beer... yes “Beer”….an IPA to be exact. We had 18 residents join our (sudsy) team. The 4 week process began back in December and ended with our Brew Masters dinner. The residents were blown away and enjoyed themselves immensely, some a little too much.

Michigan: Guess the Greens at EHM Saline
At Evangelical Homes of Saline, we kicked off the first week of National Nutrition Month! Featured below is a staff member working in our Blossom Café assisting the RDs in promoting their Savor the Flavor education board. This week, along with fellow team members in the café, Tosheona works with the EHM team members, clients, and residents to promote the theme “Greens”. Illinois: New Resident Dinner at Westminster
Westminster hosted it's yearly New Residents Welcome Dinner on February 26th in the James Room. 57 people were in attendance including new residents, resident committee members and department directors from Presbyterian Homes. The event started with drinks and appetizers followed by a 4 course dinner which was well received by all of the guests.

Texas: Compass in the Community
For the recent Compass in the Community initiative, our employees wanted to do a food drive. Rhett Lillard, our main bistro associate, helped to organize this project by finding an organization and getting the word out to our residents and staff members. I helped by creating the flyers and setting up the donation locations. The administration staff at The Crossings got excited about the project, and helped to collect donations from their staff members as well.
We chose to donate to Bay Area Turning Point residential shelter in Webster, TX. BATP is a shelter for women and children who have been the victim of abuse or assault. In a little over two weeks, we collected approximately $150 of donations, which is impressive for a brand new community that isn't full yet! Rhett and I dropped the donations off today, and the BATP staff members were so excited and grateful for our help. This project has helped us to bring our team closer together and remind us that not only do we enrich the lives of seniors every day, we can enrich the lives in the community around us as well.
