California: AMITL at Covington


Today Chefs Eric and Mike, put on a food demonstration for the independent residents at the Covington featuring a African American dessert, called 'Calus" or Fried Cake.  The dessert originated  by slaves living in the rice growing region of Africa and blended with the French influence as they moved to the Southern States.  The hot, fried cakes, similar to the French beignets, were sold on the streets in the French Quarter by Black or Creole vendors.


Residents were very interested in the history behind this simple dessert and asked to have it offered again!  Great job team.
